Lyuba Tours Bulgarian and Balkans Cooking weekends 2015

These trips will bring us to different geographical areas, where we can learn how to cook local traditional specialties, forgotten old recopies from our grannies or to learn how to make preserves of fresh eco products. A trip every month will present how to cook traditional food typical for that particular month. We do not mention date of the trip. If you are interested, please e mail or call. We will manage suitable convenient day for all who are interested.

Trips have been calculated at min of 6 people. Maximum number of participants is 10.

February: Chomlek Trip south of Sofia (Samokov district village)

In February people eat a lot of stews: the warmth dishes are important for body energy by the end of winter. We will learn how to make different stews from local people of villages, situated on the slopes of Rila Mountain.

Menu includes:

  • Chomlek – kebab: a special cooked beef stew
  • Popska Yahniya: A stew with baby onions and meat (chicken or veal)
  • Prunes Stew: with two varieties- vegan or with veal
  • Beans stew of Rila Mountain
  • Pita A La Samokov Style
  • Cake village style with fruits and walnuts
  • Shipkovinitsa/ yabulkovitsa/ krushovitsa – soft drinks for everyone who needs lots of vitamins

March: Burania Trip ( Barkanitsa Trip) to North-Western Bulgaria (Berkovitsa district village)

March is month of Easter Fast. Villagers created lots of dishes based on first green leaves of mountain fields as nettle, spinach, kiselets, which they mixed with other home products making enormous number of delicious dishes.

Menu includes:

  • Nettle soup
  • Nettle balls, puree
  • Mushrooms plakia
  • Papuda stews and Peppers stuffed with beans
  • Tiganitsi
  • Kurabii old style
  • Washed banitsa
  • Homemade lemonade

April: Pre-Easter SARMA KEBAP Trip (Srednogorie area village)

April is month of Easter. People dye eggs, make Easter bread and of course – in new times Easter is not Easter without lamb!

May: STOMNA Tour (Rhodope/ Pirin mountain village)

May 6, 2015, Wednesday

May is month when sheep flocks are going to the mountains. Villagers celebrate St. George Day and people start milking sheep for the first time of the year. Stomna means pottery jar, which main use is to keep cold fresh water. The genius villagers created lots of dishes which are prepared in Stomna giving extremely good taste to them. Of course these days we cannot miss the St. George style baked lamb too.

June: Zelenilki Tour (Rila mountain)

Everything is green in June. Flowers sprinkle fields with many colors. Trees try to touch the sky with their rich green crowns. People go to mountain to pick the God’s gifts: wild berries, green leaves, mushrooms, herbs, spices. This month our cooking trip will teach us how to prepare dishes out of mountain wild greens, herbs, mushrooms, berries

Menu:

  • Salad of nettle or greens and fresh green onion
  • Mountain Green leaves soup
  • Greens puree with eggs and green onion
  • Stuffed green leaves with rice, veggies and herbs

July: Mussaka Tour (Koprivshtitsa)

Mussaka is favorite dish of young and old in the Balkans. Very easy to make and very easy to eat! Mussaka means dish of layers of veggies and meat or pasta, or rice. Best mussaka is baked in oven and covered by sauce béchamel at the end of cooking. In July we can make mussaka with many different vegetables, but will not forget classical dish with egg plants and potatoes.

July: Milky Way Tour (Balkan mountain village) (TBA)

Milky Way is the road to Heaven according to old believes. Lets we take it!

In hot summer days not is better than taste of cold refreshing tarator or chalbour, where all ingredients united will drive us to the Heaven indeed!

August: Gyuvetch Tour (Balkan mountain village)

Gyuvetch is traditional dish, when women can put all kind of vegetables and meat in a pot and baked until everything get mild and tasty to melt in a mouth. In August gardens are full with vegetables and this is the best season to make good gyuvetch.

August: Kurban Tour (Village of Balkan mountain)

This is a tour to teach you how to meet over hundred guests without lots of efforts. We are going to village whre will learn how to cook kurbans for village weddings or big community celebrations.

September: Yahniya Tour (North Western Balkan mountain)

The autumn is coming! That means a lot of work- in the fields and in home. Everybody is busy. Time to cook is very limited. This is how yahniya were created. Saving time, you can put everything in casserole and go to do other job while dish is cooked by itself. Wait to taste- you will be surprised for result. The only dangerous moment is fresh baked bread which goes well with yahniya. Attention! One can easily eat his fingers- so delicious is that food!

October: Piperenitsa Tour or CHUSHKOPEK ADVENTURE (somewhere in Srednogorie)

Have you heard of chushkopek? This is the best Bulgarian contribution to the modern 20th century technical innovations. To have shushkopek means that family has been already listed among most advanced technically Bulgarians. We are bringing you to one of those Bulgarian families which have chushkopek. Together we will prepare all winter preserves. Thanks, dear CHUSHKOPEK!

October 30 – November 1: Vampire Cuisine – Tour to Romania (TBA)

Have you seen a hungry vampire? In October no one vampire could die of hunger. So many tourists are visiting beautiful Romanian castles that for sure vampires will be happy. We will share work in kitchens and together with our Romanian hosts will taste the Dracula’s favorites.

Dracula’s Menu:

  • Steak with warms and bugs and mamaliga bread

November: Ribnik Tour ( Village of Pasarel)

It is time for the Christmas fast. During this period fish has been recommended. Early December , on the day of St. Nicolas people are eating fish obligatory. Lets we be prepared for that day in advance!

  • Fish soups- different varieties from different areas of Bulgaria
  • Stuffed mountain fresh carp with walnuts and onion baked in oven
  • Fresh mountain wild trout baked with herbs

November 25 – 29: Pasticcio Adventure: Traditional Greek Homemade cuisine – cooking trip to Greece (TBA)

December: Twelve Dishes of Prosperity – old style recipes and traditions. Badni Vecher  – Christmas Eve Cooking: We are cooking with famous Chef of stuffed peppers in Sofia!(TBA)

My mother started preparations for this evening, a week before the day. But time has never been enough! Better to take day off if you want to learn and cook all dishes of Budni Vecher. The table likes veggies on that eve. Special products for their colors, shape and secret meanings conquer the tables. Everything is peaceful. Silence – the lucky bread with coin is coming! Who will be the luckiest one? Some wait for Midnight, when Santa can open refrigerator to take flat sausage out! On that Eve seems everybody likes Santa!

December: The Magic Turkey! The Festive New Year traditional cooking

By December, everybody expects the End of the World! Shops are full with people, who are buying food like this is their last shopping opportunity. The tables will be full: meat, meat and meat! The Art of Cooking Meat! A friend of mine liked to say: The most I like is a nice pork steak with side dish of lots of sausages and meatballs. The wolves should be very happy!

In my family New Year always has been celebrated with Turkey, stuffed A La Bulgarian Style with delicious special cooked pickle cabbage. Something as Thanksgiving, as we always Thanks to Lord for the blessing. Since those times, Turkey has been New Year and New Year has been a Turkey! I would be glad to share the recepies of mine mother, father and the whole relatives. Thank you for coming!
